Flavareze ™ enzymes are derived from food grade microbial sources, which have not been genetically modified. Activities available in the Flavareze ™ line of enzyme products extend over a wide range of pH and temperature conditions, including endo-protease, amino-peptidase, lipase and glutaminase. Flavareze ™ enzymes have applications in the manufacturer of precursor systems for Maillard reactions, hydrolyzed vegetable proteins (HVP), yeast extracts and enzyme-modified cheeses. Valley Research has expanded capabilities with the Crystalzyme® family of enzymes for enhancement of fruit and vegetable flavor extracts as well. |
